  • 3 cups cooked rice, chilled, chilled
  • 2 tbsp vegetable oil
  • 1 lb boneless, skinless chicken breast, diced, diced
  • 1/2 lb large shrimp, peeled and deveined, peeled and deveined
  • 4 oz andouille sausage, diced, diced
  • 1/2 cup onion, diced, diced
  • 4 cloves garlic, minced, minced
  • 1/2 cup green onions, sliced, sliced
  • 1/2 cup bell pepper, diced, diced
  • 2 tbsp tamari or gluten-free soy sauce
  • 2 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 2 eggs, beaten

Instructions

    Heat 2 tbsp vegetable oil in a large skillet or wok over high heat.

    Add 1 lb diced boneless, skinless chicken breast, diced, 1/2 lb peeled and deveined large shrimp, peeled and deveined, and 4 oz diced andouille sausage, diced. Stir-fry for 4-5 minutes until cooked through.

    Push the meat to the side and scramble 2 beaten eggs in the cleared space until cooked, about 2 minutes.

    Add 1/2 cup diced onion, diced, 4 cloves minced garlic, minced, and 1/2 cup diced bell pepper, diced. Stir-fry for 2 minutes until softened.

    Add 3 cups chilled cooked rice, chilled and break up any clumps, stirring constantly for 2-3 minutes.

    Pour in 2 tbsp tamari or gluten-free soy sauce and sprinkle with 2 tsp Cajun seasoning, 1/2 tsp paprika, and 1/4 tsp cayenne pepper.
