Cajun Meat Pies
Handheld pastry pies stuffed with a savory ground beef, pork, and holy trinity vegetable filling.
Ingredients
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 cup unsalted butter, cold, cubed
- 1/2 cup whole milk
- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup yellow onion, finely diced
- 1/2 cup green bell pepper, finely diced
- 1/2 cup celery, finely diced
- 2 garlic cloves, minced
- 2 tsp Cajun seasoning

In a large bowl, whisk 3 cups all-purpose flour, 1 tsp baking powder, and 1 tsp salt. Cut in 1/2 cup cold, cubed unsalted butter until crumbly, then stir in 1/2 cup whole milk to form a soft dough. Wrap and chill for 30 minutes.

Heat a skillet over medium heat. Add 1 lb ground beef and 1/2 lb ground pork, cooking until browned. Drain excess fat.

Add 1 cup finely diced yellow onion, 1/2 cup finely diced green bell pepper, 1/2 cup finely diced celery, 2 minced garlic cloves, and 2 tsp Cajun seasoning to the skillet. Cook for 5 minutes until vegetables soften and meat reaches an internal temperature of 160°F. Remove from heat and cool.

Preheat oven to 375°F. Roll dough thin on a floured surface and cut into 5-inch circles.

Spoon meat filling onto half of each dough circle, fold over, and crimp edges with a fork to seal.

Place pies on a baking sheet and bake for 20 to 25 minutes until golden brown.
