Chinese Almond Cookie
Crispy, crumbly traditional cookies packed with rich almond flavor and finished with a whole almond in the center.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup blanched almond flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 egg, beaten
- 1 tsp pure almond extract
- 24 whole blanched almonds

Whisk together 2 cups all-purpose flour, 1/2 cup blanched almond flour, 1/2 tsp baking soda, and 1/2 tsp salt in a bowl.

In a large bowl, beat 1 cup softened unsalted butter and 2/3 cup granulated sugar until creamy.

Beat in 2 beaten egg and 1 tsp pure almond extract until well combined.

Gradually mix in the flour blend to form a cohesive dough.

Divide dough into balls, place on baking sheets, and press 24 whole blanched almonds into centers.

Bake at 350 degrees F for 12 to 14 minutes until edges turn light golden.
