Cold Poached Chicken
Tender poached chicken chilled and served with an aromatic ginger scallion sauce. A refreshing dish that highlights clean and delicate flavors.
Ingredients
- 3 lbs bone-in chicken thighs
- 2 inches ginger root, sliced
- 4 stalks scallions, halved
- 2 tbsp Chinese rice wine
- 3 tbsp ginger root, minced
- 2/3 cup scallions, chopped
- 1 tsp fine salt
- 1/4 cup vegetable oil
- 1 tsp sesame oil

Bring a large pot of water to a boil with 2 inches sliced ginger root, 4 stalks halved scallions, and 2 tbsp Chinese rice wine.

Gently lower 3 lbs bone-in chicken thighs into the boiling pot, turn heat to low, cover with a lid, and simmer for 20 minutes until internal temperature reaches 165 degrees Fahrenheit.

Transfer chicken immediately to an ice bath for 10 minutes to cool, then drain, chop into bite-sized pieces, and chill in the refrigerator.

Place 3 tbsp minced ginger root, 2/3 cup chopped scallions, and 1 tsp fine salt into a heatproof bowl.

Heat 1/4 cup vegetable oil in a small skillet until shimmering, then pour over the ginger mixture and stir in 1 tsp sesame oil.

Drizzle the ginger scallion oil over the cold poached chicken before serving.
