Curry Goat
Tender goat meat slow-simmered in a fragrant spice blend with potatoes and Scotch bonnet pepper. Rich and deeply savory with a balanced kick of heat.
Ingredients
- 2 lbs goat meat, cubed
- 3 tbsp Jamaican curry powder
- 4 garlic cloves, minced
- 2 tsp fresh ginger, grated
- 1 yellow onion, chopped
- 4 scallions, chopped
- 1 tsp salt
- 2 tbsp vegetable oil
- 3 cups water
- 6 fresh thyme sprigs
- 1 Scotch bonnet pepper, halved
- 2 Yukon Gold potatoes, cubed

In a large bowl, combine 2 lbs cubed goat meat, 3 tbsp Jamaican curry powder, 4 minced garlic cloves, 2 tsp grated fresh ginger, 1 chopped yellow onion, 4 chopped scallions, and 1 tsp salt.

Heat 2 tbsp vegetable oil in a heavy pot over medium-high heat until shimmering.

Add the seasoned goat meat and sear for 8 to 10 minutes until browned on all sides.

Pour in 3 cups water, then add 6 fresh thyme sprigs and 1 halved Scotch bonnet pepper.

Reduce heat to low, cover, and simmer for 90 minutes.

Add 2 cubed Yukon Gold potatoes, re-cover, and simmer for 25 to 30 minutes until tender.

Verify the internal temperature of the goat meat reaches at least 160°F before serving.
