Dulce de Leche Cortada
A traditional Caribbean sweet dessert made from curdled milk simmered with sugar, lime juice, and cinnamon until caramel-hued curds form in golden syrup.

- 4 cups whole milk
- 2 tbsp fresh lime juice
- 1 cup granulated sugar
- 1 cinnamon stick
- 1 tsp vanilla extract
- 1 pinch salt

In a heavy saucepan, combine 4 cups whole milk, 1 cup granulated sugar, 1 cinnamon stick, and 1 pinch salt over medium heat.

Stir gently until the sugar dissolves and the liquid begins to steam.

Pour in 2 tbsp fresh lime juice and stir once, then allow the liquid to curdle without stirring further.

Reduce heat to low and simmer for 35 to 40 minutes until golden syrup and curds form.

Stir in 1 tsp vanilla extract, remove the cinnamon stick, and cool before serving.
