Ensalada de Quinua
A vibrant Peruvian salad featuring fluffy quinoa tossed with sweet choclo, avocado, queso fresco, and a sharp lime dressing.
Ingredients
- 1 cup white or tricolor quinoa, rinsed
- 2 cups water
- 1 cup choclo corn kernels, thawed
- 1/2 cup queso fresco, crumbled
- 1/2 cup red onion, finely diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 3 tbsp fresh lime juice
- 2 tbsp extra virgin olive oil
- 1/2 tsp salt

Combine 1 cup rinsed white or tricolor quinoa and 2 cups water in a medium saucepan and bring to a boil over medium-high heat.

Reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed, then fluff with a fork and cool.

In a large bowl, whisk together 3 tbsp fresh lime juice, 2 tbsp extra virgin olive oil, and 1/2 tsp salt.

Add cooled white or tricolor quinoa, 1 cup thawed choclo corn kernels, 1/2 cup finely diced red onion, 1 cup halved cherry tomatoes, 1/2 cup crumbled queso fresco, 1 diced avocado, and 1/4 cup chopped fresh cilantro to the bowl.

Toss gently until all ingredients are evenly coated and serve chilled or at room temperature.
