Ensalada de Oca
A refreshing Andean salad featuring tender boiled oca tubers tossed with creamy cheese, sweet choclo, and a bright citrus dressing.
Ingredients
- 1 lb oca tubers, sliced
- 1 cup Peruvian corn kernels, cooked
- 1 cup queso fresco, diced
- 1/2 cup red onion, thinly sliced
- 2 tbsp fresh lime juice
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh cilantro, chopped
- 1/2 tsp fine salt

Bring a pot of salted water to a boil over high heat.

Add 1 lb sliced oca tubers and cook for 12 minutes until tender when pierced with a fork.

Drain oca tubers and let cool completely.

In a large bowl, whisk together 2 tbsp fresh lime juice, 2 tbsp extra virgin olive oil, and 1/2 tsp fine salt.

Add cooled oca tubers, 1 cup cooked Peruvian corn kernels, 1 cup diced queso fresco, 1/2 cup thinly sliced red onion, and 2 tbsp chopped fresh cilantro to the dressing.
