German Breakfast Egg
A classic German breakfast open-face toasted rye sandwich layered with seared Black Forest ham, a fried egg, and fresh chives.
Ingredients
- 2 tbsp unsalted butter
- 2 slices dark rye bread, sliced
- 4 oz Black Forest ham, sliced
- 2 large eggs
- 2 tsp fresh chives, finely chopped
- 1/8 tsp fine sea salt
- 1/8 tsp black pepper, ground

Melt 2 tbsp unsalted butter in a nonstick skillet over medium heat.

Add 2 slices sliced dark rye bread to the skillet and toast for 2 minutes per side until crisp and golden brown, then transfer to plates.

In the same skillet, sear 4 oz sliced Black Forest ham for 1 to 2 minutes per side until heated through to an internal temperature of 165°F.

Place the warmed Black Forest ham directly on top of the toasted dark rye bread.

Crack 2 large eggs into the skillet and fry sunny-side up for 3 minutes until whites are firm and yolks remain soft.

Place one egg over each toast, then season with 1/8 tsp fine sea salt and 1/8 tsp ground black pepper, and sprinkle with 2 tsp finely chopped fresh chives before serving.
