German Lentil Salad
A warm and hearty lentil salad packed with crisp bacon, apples, and veggies tossed in a warm mustard vinaigrette.
Ingredients
- 1 cup brown lentils
- 3 cups vegetable broth
- 4 strips thick-cut bacon, diced
- 1 Gala apple, diced
- 2 carrots, diced
- 1/2 cup red onion, diced
- 3 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1/4 cup fresh parsley, chopped

Combine 1 cup brown lentils and 3 cups vegetable broth in a medium saucepan, bring to a boil, then reduce heat and simmer for 20 minutes until tender.

Drain any excess liquid from the brown lentils and transfer to a large mixing bowl.

In a skillet over medium heat, cook 4 strips diced thick-cut bacon for 6 to 8 minutes until crisp and it reaches an internal temperature of 160 F.

Add 2 diced carrots, 1/2 cup diced red onion, and 1 diced Gala apple to the skillet with the bacon fat, stirring for 4 minutes until slightly softened.

Whisk in 3 tbsp apple cider vinegar and 1 tbsp Dijon mustard to form a warm dressing, then remove from heat.

Pour the skillet mixture over the warm brown lentils, add 1/4 cup chopped fresh parsley, and toss well before serving.
