Hochzeitssuppe
A traditional wedding soup featuring delicate pork meatballs, rich egg custard, carrots, asparagus, and fine egg noodles in a clear beef broth.
Ingredients
- 6 cups beef broth
- 1/2 lb ground pork
- 1/4 cup breadcrumbs
- 4 eggs, beaten
- 1/2 cup whole milk
- 2 carrots, sliced
- 1 cup white asparagus, chopped
- 1/2 cup thin egg noodles
- 2 tbsp fresh parsley, minced

Whisk 4 beaten eggs with 1/2 cup whole milk in a heat safe bowl, then steam covered over boiling water for 15 minutes until set, cool, and cut into cubes.

Mix 1/2 lb ground pork with 1/4 cup breadcrumbs, season with salt and pepper, and shape into small meatballs.

Bring 6 cups beef broth to a simmer in a large pot over medium heat.

Add meatballs, 2 sliced carrots, and 1 cup chopped white asparagus to the broth, simmering for 10 minutes until meatballs reach an internal temperature of 160°F.

Add 1/2 cup thin egg noodles to the pot and cook for 5 minutes until soft.

Stir in the egg custard cubes and 2 tbsp minced fresh parsley right before serving.
