Heringssalat
A traditional German herring salad featuring tender pickled herring, crisp apples, and sweet beets in a creamy sour cream dressing. Perfect served cold with crusty rye bread or boiled potatoes.
Ingredients
- 12 oz pickled herring fillets, diced
- 1 cup pickled beetroot, diced
- 1 cup Granny Smith apple, diced
- 1/2 cup dill pickles, diced
- 1/2 cup red onion, finely diced
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp dill pickle brine
- 2 tbsp fresh dill, chopped
- 1/4 tsp salt
- 1/4 tsp black pepper

In a large bowl, whisk together 1/2 cup sour cream, 1/4 cup mayonnaise, 2 tbsp dill pickle brine, 1/4 tsp salt, and 1/4 tsp black pepper until smooth.

Add 12 oz diced pickled herring fillets, 1 cup diced pickled beetroot, 1 cup diced Granny Smith apple, 1/2 cup diced dill pickles, and 1/2 cup finely diced red onion to the dressing.

Gently fold ingredients together until evenly coated.

Stir in 2 tbsp chopped fresh dill, cover, and chill in the refrigerator for at least 2 hours before serving.
