  • 1.5 lbs boneless skinless chicken breasts, cubed
  • 1 tbsp ground turmeric
  • 8 garlic cloves, minced
  • 2 tbsp fresh ginger, minced
  • 1 onion, diced
  • 2 cups coconut milk
  • 1 cup chicken broth
  • 2 lemongrass stalks, bruised
  • 2 tbsp galangal, sliced
  • 4 kaffir lime leaves
  • 2 tbsp coconut oil
  • 1/2 tsp sea salt

Instructions

    Heat 2 tbsp coconut oil in a large pot over medium heat. Add 1 diced onion and sauté for 2-3 minutes until softened.

    Add 8 minced garlic cloves, 2 tbsp minced fresh ginger, 1 tbsp ground turmeric, and 2 tbsp sliced galangal. Stir and cook for 1-2 minutes until fragrant.

    Add 1.5 lbs cubed boneless skinless chicken breasts pieces and stir to coat with the turmeric paste. Cook for 3-4 minutes.

    Pour in 2 cups coconut milk and 1 cup chicken broth. Add 2 bruised lemongrass stalks and 4 kaffir lime leaves.

    Bring to a simmer and cook for 20 minutes, until chicken is cooked through and tender.

    Season with 1/2 tsp sea salt and pinch white pepper. Taste and adjust as needed.
