Mi Goreng Soup
A comforting noodle soup inspired by Indonesian fried noodles, featuring a rich, sweet, and spicy broth topped with chicken and greens.
Ingredients
- 2 shallot, sliced
- 2 garlic cloves, minced
- 4 cups chicken broth
- 2 tbsp kecap manis
- 2 tsp sambal oelek
- 0.5 lb chicken breast, sliced
- 2 packs ramen noodles
- 2 heads bok choy, chopped
- 2 eggs
- 2 tbsp fried shallots

Heat oil in a pot over medium heat, then sauté 2 sliced shallot and 2 minced garlic cloves until soft.

Pour in 4 cups chicken broth, 2 tbsp kecap manis, and 2 tsp sambal oelek, bringing liquid to a simmer.

Add 0.5 lb sliced chicken breast and simmer until cooked to an internal temperature of 165°F.

Stir in 2 packs ramen noodles and 2 heads chopped bok choy, simmering for 3 minutes.
