Mulukhiyah Soup
A silky Middle Eastern herb soup made with tender jute leaves, garlic, and simmered chicken in a savory broth.
Ingredients
- 4 cups chicken broth
- 1 lb boneless chicken breast, cubed
- 400 g frozen finely chopped mulukhiyah, thawed
- 2 tbsp ghee
- 6 garlic cloves, minced
- 2 tsp ground coriander
- 2 tbsp lemon juice
- 1 tsp salt

Bring 4 cups chicken broth to a simmer in a large pot over medium heat.

Add 1 lb cubed boneless chicken breast and 1 tsp salt, cooking for 12 to 15 minutes until chicken reaches an internal temperature of 165°F.

Whisk 400 g thawed frozen finely chopped mulukhiyah into the broth and simmer gently over low heat for 5 minutes without boiling.

Heat 2 tbsp ghee in a small skillet over medium heat, then add 6 minced garlic cloves and 2 tsp ground coriander, sizzling for 2 minutes until golden.

Pour the sizzling garlic mixture into the soup, stir in 2 tbsp lemon juice, and serve immediately.
