Okroshka
A refreshing cold Russian summer soup made with diced vegetables, eggs, cooked ham, and fresh herbs in a chilled kvass broth.
Ingredients
- 2 cups yellow potatoes, diced
- 4 hard-boiled eggs, diced
- 2 cups English cucumbers, diced
- 1 cup red radishes, thinly sliced
- 1 cup cooked ham, diced
- 1/2 cup green onions, chopped
- 1/4 cup fresh dill, chopped
- 1/2 cup sour cream
- 2 tsp Dijon mustard
- 1 tsp salt
- 4 cups chilled kvass

Boil 2 cups diced yellow potatoes in salted water until tender, about 12 minutes, then drain and cool completely.

In a large bowl, combine cooled yellow potatoes, 4 diced hard-boiled eggs, 2 cups diced English cucumbers, 1 cup thinly sliced red radishes, 1 cup diced cooked ham, 1/2 cup chopped green onions, and 1/4 cup chopped fresh dill.

In a small bowl, whisk together 1/2 cup sour cream, 2 tsp Dijon mustard, and 1 tsp salt until smooth.

Add the sour cream dressing to the bowl of diced ingredients and toss gently to combine.

Divide the mixture into chilled bowls and pour cold 4 cups chilled kvass over each portion right before serving.
