Pelmeni
Traditional meat dumplings wrapped in thin unleavened dough, boiled and served with butter and sour cream.
Ingredients
- 3 cups all-purpose flour
- 1 egg, beaten
- 3/4 cup warm water
- 1 tsp salt
- 1/2 lb ground beef
- 1/2 lb ground pork
- 1 small yellow onion, grated
- 1/2 tsp ground black pepper
- 2 tbsp unsalted butter, melted
- 1/2 cup sour cream

Mix 3 cups all-purpose flour, 1 beaten egg, 3/4 cup warm water, and half of the 1 tsp salt in a bowl to form a smooth dough, knead for 10 minutes, and rest for 30 minutes.

Combine 1/2 lb ground beef, 1/2 lb ground pork, 1 small grated yellow onion, remaining 1 tsp salt, and 1/2 tsp ground black pepper in a separate bowl until fully blended.

Roll dough thin on a floured surface, cut into small circles, place filling in center, fold into half-moons, and pinch corners together.

Boil dumplings in salted water for 5 to 7 minutes until they float and internal temperature reaches 160 degrees F.

Drain well, toss with 2 tbsp melted unsalted butter, and serve hot with 1/2 cup sour cream.
