Paratha Roti
Soft, layered Caribbean flatbread cooked on a hot skillet until flaky and tender. Perfect for scooping up savory curries and stews.
Ingredients
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 cup warm water
- 1/4 cup vegetable shortening, softened
- 4 tbsp vegetable oil

In a large bowl, whisk together 3 cups all-purpose flour, 2 tsp baking powder, and 1 tsp salt.

Gradually add 1 cup warm water and knead for 5 minutes until a smooth, soft dough forms.

Divide dough into four equal balls and let rest covered for 15 minutes.

Roll each ball out thin, spread with 1/4 cup softened vegetable shortening, cut a slit from the center to the edge, roll tightly into a cone, and press the tip inside to form a spiral dough ball.

Rest the spiral dough balls for 20 minutes, then roll each flat into a thin circle.

Heat a heavy skillet over medium-high heat, cook each flat dough circle for 1 minute, brush with 4 tbsp vegetable oil, flip, brush again, and cook until puffed and lightly golden on both sides.
