Plantain Fritters
Golden crispy fritters made from ripe plantains and spiced with Caribbean seasonings, perfect as an appetizer or snack.
Ingredients
- 3 lbs ripe plantains (yellow with black spots), peeled and sliced
- 1/4 cup all-purpose flour
- 2 tbsp cornstarch
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp vanilla extract
- 1/4 tsp salt
- 3 cups vegetable oil

In a bowl, combine 1/4 cup all-purpose flour, 2 tbsp cornstarch, 1/4 tsp ground cinnamon, 1/4 tsp ground nutmeg, and 1/4 tsp salt.

Toss 3 lbs peeled and sliced ripe plantains (yellow with black spots) with the flour mixture until evenly coated.

Add 1 tsp vanilla extract and mix gently to incorporate.

Heat 3 cups vegetable oil in a deep pot to 350°F.

Carefully place coated plantain slices into the hot oil in small batches.

Fry for 5-8 minutes per side until golden brown and cooked through.

Remove with a slotted spoon and drain on paper towels.
