Pigeon Peas and Rice
Fluffy long grain rice simmered with tender pigeon peas, creamy coconut milk, and aromatic herbs. A comforting one pot side or main meal.
Ingredients
- 1 tbsp vegetable oil
- 1/2 yellow onion, diced
- 1/2 green bell pepper, diced
- 4 garlic cloves, minced
- 1 can canned pigeon peas, drained
- 2 cups long grain white rice, rinsed
- 1 cup unsweetened coconut milk
- 2 cups vegetable broth
- 4 fresh thyme sprigs
- 1 tsp salt

Heat 1 tbsp vegetable oil in a large pot over medium heat.

Add 1/2 diced yellow onion, 1/2 diced green bell pepper, and 4 minced garlic cloves, sautéing for 5 minutes until softened.

Stir in 1 can drained canned pigeon peas and cook for 2 minutes to blend flavors.

Add 2 cups rinsed long grain white rice, 1 cup unsweetened coconut milk, 2 cups vegetable broth, 4 fresh thyme sprigs, and 1 tsp salt.

Bring liquid to a boil, cover pot tightly, reduce heat to low, and simmer for 20 minutes.

Remove pot from heat and let rest covered for 5 minutes before fluffing rice with a fork.
