Pholourie
Crispy golden Caribbean split pea fritters seasoned with garlic, culantro, and spices. Fried until light and airy inside, these popular street food snacks are best enjoyed hot with savory chutneys.
Ingredients
- 1 cup yellow split peas, soaked
- 1 cup all-purpose flour
- 4 garlic cloves, peeled
- 4 culantro leaves, chopped
- 1/2 scotch bonnet pepper, seeded
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1 tsp instant yeast
- 1/2 tsp baking powder
- 1 tsp salt
- 1 cup warm water
- 4 cups vegetable oil

In a blender, combine 1 cup soaked yellow split peas, 4 peeled garlic cloves, 4 chopped culantro leaves, 1/2 seeded scotch bonnet pepper, and 1 cup warm water. Blend until smooth.

In a large bowl, whisk together 1 cup all-purpose flour, 1 tsp ground cumin, 1/2 tsp ground turmeric, 1 tsp instant yeast, 1/2 tsp baking powder, and 1 tsp salt.

Pour the blended mixture into the dry ingredients and stir to form a thick batter.

Cover the bowl and let the batter rise in a warm spot for 1 hour until bubbly.

Heat 4 cups vegetable oil in a deep pot over medium heat to 350 degrees F.

Drop small spoonfuls of batter into the hot oil and fry for 3 to 4 minutes until golden brown.
