Peltou
A rich Caribbean one-pot dish featuring browned chicken simmered with long-grain rice, pigeon peas, herbs, and coconut milk.
Ingredients
- 2 lbs boneless chicken thighs, cut into bites
- 1/4 cup Caribbean green seasoning
- 2 tbsp vegetable oil
- 2 tbsp brown sugar
- 2 cups long-grain white rice, rinsed
- 1 can canned pigeon peas, drained
- 1 cup unsweetened coconut milk
- 2 cups low-sodium chicken broth
- 1 scotch bonnet pepper, whole

Marinate 2 lbs cut into bites boneless chicken thighs with 1/4 cup Caribbean green seasoning in a bowl for 20 minutes.

Heat 2 tbsp vegetable oil and 2 tbsp brown sugar in a pot over medium-high heat until caramel bubbles.

Add 2 lbs cut into bites boneless chicken thighs and stir-fry for 5 minutes until browned.

Mix in 2 cups rinsed long-grain white rice and 1 can drained canned pigeon peas, stirring for 2 minutes.

Pour in 1 cup unsweetened coconut milk and 2 cups low-sodium chicken broth, adding 1 whole scotch bonnet pepper on top.

Cover and simmer on low heat for 25 minutes until liquid absorbs and 2 lbs cut into bites boneless chicken thighs reaches 165°F.

Discard 1 whole scotch bonnet pepper and fluff before serving.
