Samgyeopsal
Thick slices of unseasoned pork belly grilled until crisp at the table. Served with savory dipping sauces, sliced garlic, and fresh lettuce wraps.
Ingredients
- 2 lbs pork belly strips, sliced
- 2 tbsp toasted sesame oil
- 1 tsp coarse sea salt
- 1/2 tsp freshly cracked black pepper
- 8 garlic cloves, sliced
- 16 red leaf lettuce leaves, washed
- 1/4 cup ssamjang paste

Mix 2 tbsp toasted sesame oil, 1 tsp coarse sea salt, and 1/2 tsp freshly cracked black pepper in a small bowl to make oil dip. Set aside with 1/4 cup ssamjang paste.

Heat a skillet or cast iron grill pan over medium-high heat until hot.

Lay 2 lbs sliced pork belly strips and 8 sliced garlic cloves in a single layer in the hot pan.

Cook pork belly for 3 to 4 minutes per side until golden brown and crisp, checking that internal temperature reaches at least 145 degrees F.

Cut pork strips into bite-sized pieces and serve immediately wrapped in 16 washed red leaf lettuce leaves with grilled garlic and sauces.
