Songpyeon
Traditional chewy half-moon rice cakes stuffed with a sweet toasted sesame filling and steamed over fresh pine needles.
Ingredients
- 2 cups short-grain rice flour
- 1/2 tsp fine salt
- 2/3 cup boiling water
- 1/4 cup toasted sesame seeds, crushed
- 2 tbsp granulated sugar
- 2 tsp toasted sesame oil
- 2 cups fresh pine needles, washed

Mix 2 cups short-grain rice flour and 1/2 tsp fine salt in a bowl, then stir in 2/3 cup boiling water to form a soft dough.

Knead dough until smooth, cover with a damp cloth, and rest for 20 minutes.

In a small bowl, combine 1/4 cup crushed toasted sesame seeds and 2 tbsp granulated sugar for the sweet filling.

Divide dough into small balls, flatten each, press a center well, add filling, pinch closed, and shape into half-moons.

Line a steamer with 2 cups washed fresh pine needles, place rice cakes on top without touching, and steam over high heat for 20 minutes.

Rinse steamed cakes in cold water, drain, and brush with 2 tsp toasted sesame oil before serving.
