Stracciatella alla Romana
A comforting Roman egg drop soup featuring rich chicken broth filled with delicate strands of egg, Parmigiano-Reggiano, lemon zest, and nutmeg.
Ingredients
- 4 cups chicken broth
- 4 large eggs
- 1/2 cup Parmigiano-Reggiano cheese, grated
- 2 tbsp semolina flour
- 1/2 tsp lemon zest, grated
- 1/8 tsp ground nutmeg
- 2 tbsp fresh flat-leaf parsley, chopped
- 1/4 tsp black pepper, cracked
