Green Bean Salad
Crisp-tender green beans tossed with juicy cherry tomatoes, red onion, and kalamata olives in a zesty oregano vinaigrette.
Ingredients
- 1 lb fresh green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup pitted kalamata olives, halved
- 3 tbsp extra-virgin olive oil
- 1.5 tbsp red wine vinegar
- 1/2 tsp dried oregano
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 2 tbsp fresh basil leaves, chopped

Bring a large pot of salted water to a boil.

Add 1 lb trimmed fresh green beans and cook for 3 to 4 minutes until tender-crisp and bright green.

Drain green beans immediately and plunge into a bowl of ice water to stop cooking, then drain and pat dry.

In a small bowl, whisk together 3 tbsp extra-virgin olive oil, 1.5 tbsp red wine vinegar, 1/2 tsp dried oregano, 1/2 tsp kosher salt, and 1/4 tsp freshly cracked black pepper.

In a large salad bowl, combine cooked green beans, 1 cup halved cherry tomatoes, 1/4 cup thinly sliced red onion, and 1/4 cup halved pitted kalamata olives.

Pour vinaigrette over salad, toss well, and garnish with 2 tbsp chopped fresh basil leaves before serving.
