Strawberry Hibiscus Agua Fresca
A jewel-toned Mexican agua fresca combining sweet strawberries with tangy dried hibiscus flowers, blended smooth and sweetened lightly for a show-stopping summer drink.
Ingredients
- 2 cups fresh strawberries, hulled, halved
- 2 tbsp dried hibiscus flowers (Jamaica flowers)
- 2 cups hot water (for steeping)
- 2 cups cold water
- 2 tbsp granulated sugar
- 2 tbsp fresh lime juice
- 4 cups ice cubes

Steep 2 tbsp dried hibiscus flowers (Jamaica flowers) in 2 cups hot water (for steeping) for 5 minutes, then strain and let the tea cool to room temperature.

Add 2 cups hulled, halved fresh strawberries, the cooled hibiscus tea, 2 cups cold water, 2 tbsp granulated sugar, and 2 tbsp fresh lime juice to a blender. Blend on high until smooth, about 60 seconds.

Pour through a fine-mesh strainer into a large pitcher, pressing to extract the juice. Discard solids.

Stir and taste, adjusting sugar or lime as needed.

Serve over 4 cups ice cubes in chilled glasses.
