Banh Flan
A classic Vietnamese dessert of silky egg custard topped with dark caramel sauce and served with a splash of brewed espresso.
Ingredients
- 1/2 cup granulated sugar
- 1/4 cup water
- 4 large eggs
- 2 large egg yolks
- 14 oz sweetened condensed milk
- 2 cups whole milk
- 1 tsp vanilla extract
- 1/2 cup brewed espresso, chilled

Melt 1/2 cup granulated sugar with 1/4 cup water in a small saucepan over medium heat without stirring until caramel turns deep golden brown.

Divide the caramel immediately among 6 ramekins and set aside to cool.

Gently whisk 4 large eggs and 2 large egg yolks in a bowl until smooth.

Heat 14 oz sweetened condensed milk, 2 cups whole milk, and 1 tsp vanilla extract in a saucepan until warm to the touch.

Whisk warm milk into eggs, strain through a sieve, and pour into caramel-lined ramekins.

Cover ramekins with foil and steam over simmering water for 25 minutes until set.

Chill for 4 hours, unmold onto plates, and pour 1/2 cup chilled brewed espresso over each flan.
