Bolinho de Bacalhau
A classic Brazilian fritter with crisp golden skin and a fluffy interior of salt cod, mashed potatoes, and fresh herbs.
Ingredients
- 1 lb desalted salt cod, shredded
- 1.5 lbs russet potatoes, mashed
- 2 large eggs, beaten
- 1/4 cup fresh parsley, chopped
- 2 garlic cloves, minced
- 1/2 cup yellow onion, finely diced
- 1/2 tsp black pepper
- 4 cups vegetable oil

In a large bowl, mix 1.5 lbs mashed russet potatoes, 1 lb shredded desalted salt cod, 1/2 cup finely diced yellow onion, 2 minced garlic cloves, and 1/4 cup chopped fresh parsley.

Season with 1/2 tsp black pepper and fold in 2 beaten large eggs until a firm dough forms.

Shape the mixture into small oval quenelles using two spoons.

Heat 4 cups vegetable oil in a deep pot over medium heat until it reaches 350F.

Fry the quenelles in batches for 3 to 4 minutes until golden brown and the internal temperature reaches 165F.

Transfer to a paper towel lined plate to drain and serve warm.
