Escondidinho de Carne Seca
A savory casserole featuring desalted shredded beef sautéed with aromatics, layered under a creamy cassava mash and baked with cheese.
Ingredients
- 1.5 lbs desalted beef, shredded
- 2 lbs cassava root, peeled, cubed
- 1 medium yellow onion, diced
- 4 garlic cloves, minced
- 2 tbsp unsalted butter
- 1/2 cup whole milk
- 1/2 cup cream cheese
- 1 cup mozzarella, shredded
- 1 tbsp olive oil

Boil 2 lbs peeled, cubed cassava root in a pot of salted water for 20 minutes until fork-tender, then drain and mash until smooth.

Mix 2 tbsp unsalted butter, 1/2 cup whole milk, and 1/2 cup cream cheese into the mashed cassava until smooth and creamy; set aside.

Heat 1 tbsp olive oil in a skillet over medium heat, add 1 medium diced yellow onion and 4 minced garlic cloves, and cook until softened.

Add 1.5 lbs shredded desalted beef to the skillet and cook for 5 minutes, ensuring the internal temperature reaches at least 165°F.

Spread the beef mixture in a baking dish, cover with the cassava mash, and top with 1 cup shredded mozzarella.
