Feijão com Arroz
A staple Brazilian dish featuring fragrant garlic white rice paired with rich black beans simmered with smoked sausage.
Ingredients
- 2 cups long grain white rice, rinsed
- 4 cups water
- 2 tbsp olive oil
- 6 garlic cloves, minced
- 1 cup yellow onion, diced
- 1/2 lb smoked pork sausage, sliced
- 2 cans canned black beans, undrained
- 2 bay leaves
- 1 tsp salt

Heat half of 2 tbsp olive oil in a saucepan over medium heat, then saute half of 6 minced garlic cloves until fragrant.

Add 2 cups rinsed long grain white rice and half of 1 tsp salt, stirring for 2 minutes to toast the grains.

Pour in 4 cups water, bring to a boil, cover, reduce heat to low, and cook for 15 minutes until absorbed.

In a separate pot, heat remaining 2 tbsp olive oil over medium heat and cook 1/2 lb sliced smoked pork sausage until browned and internal temperature reaches 160 F.

Add 1 cup diced yellow onion and remaining 6 minced garlic cloves to the pot, sauteing until onion turns translucent.

Stir in 2 cans undrained canned black beans and 2 bay leaves, simmering for 15 minutes until thickened, then serve over cooked rice.
