Gulaschsuppe
A rich German beef soup simmered with sweet Hungarian paprika, onions, and potatoes. Deeply savory and comforting for cold evenings.
Ingredients
- 1.5 lbs beef chuck roast, cubed
- 2 large yellow onions, diced
- 3 garlic cloves, minced
- 2 tbsp sweet Hungarian paprika
- 1 tsp caraway seeds, crushed
- 2 tbsp tomato paste
- 4 cups beef broth
- 2 medium russet potatoes, diced
- 2 tbsp vegetable oil
- 1 tsp dried marjoram

Heat 2 tbsp vegetable oil in a pot over medium-high heat and sear 1.5 lbs cubed beef chuck roast until browned, then set aside.

Add 2 large diced yellow onions to the pot and cook until soft, then stir in 3 minced garlic cloves, 2 tbsp tomato paste, 2 tbsp sweet Hungarian paprika, and 1 tsp crushed caraway seeds for 1 minute.

Return 1.5 lbs cubed beef chuck roast to the pot, add 4 cups beef broth, and simmer covered for 60 minutes until beef reaches 195°F internally.

Stir in 2 medium diced russet potatoes and 1 tsp dried marjoram, then cook 20 minutes until tender.
