Sancocho
A hearty Colombian meat and vegetable stew made with beef, root vegetables, plantains, and aromatics. Soul-warming comfort food.
Ingredients
- 2 lbs beef chuck (cut for stew)
- 2 medium yellow onion, diced
- 4 cloves garlic, minced
- 8 cups beef broth
- 2 medium potato, cubed
- 1 lb yuca (cassava root), cubed
- 2 medium green plantain, cubed
- 2 pieces corn on the cob
- 1/4 cup fresh cilantro, chopped
- 1/2 tsp salt
- 1/8 tsp black pepper
- 2 tbsp vegetable oil

Heat 2 tbsp vegetable oil in a large pot over medium-high heat. Brown the 2 lbs beef chuck (cut for stew) on all sides, about 5 minutes. Remove and set aside.

In the same pot, sauté 2 medium diced yellow onion and 4 cloves minced garlic until fragrant, about 2 minutes.

Return beef to the pot and pour in 8 cups beef broth. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes.

Add 1 lb cubed yuca (cassava root), 2 medium cubed potato, 2 medium cubed green plantain, and 2 pieces corn on the cob. Simmer for another 25-30 minutes until all vegetables are tender.

Season with 1/2 tsp salt and 1/8 tsp black pepper to taste.

Stir in 1/4 cup chopped fresh cilantro and serve hot in bowls.
