Ajiaco
A rich chicken and potato soup infused with guascas herb, served with corn on the cob, capers, and cream.
Ingredients
- 2 lbs boneless skinless chicken breasts
- 6 cups chicken broth
- 2 lbs russet potatoes, peeled, sliced
- 1 lb Yukon Gold potatoes, peeled, sliced
- 3 corn ears, cut in thirds
- 2 tbsp dried guascas leaves
- 1 bunch scallions, chopped
- 4 garlic cloves, minced
- 1/4 cup capers, drained
- 1/2 cup heavy cream
- 1.5 tsp salt

In a large pot, combine 6 cups chicken broth, 2 lbs boneless skinless chicken breasts, 1 bunch chopped scallions, 4 minced garlic cloves, and 1.5 tsp salt over medium-high heat.

Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until chicken reaches an internal temperature of 165 degrees F.

Remove boneless skinless chicken breasts from the pot, shred the meat using two forks, and set aside.

Add 2 lbs peeled, sliced russet potatoes, 1 lb peeled, sliced Yukon Gold potatoes, 3 cut in thirds corn ears, and 2 tbsp dried guascas leaves to the simmering broth.

Simmer uncovered for 25 minutes until the potatoes break down and thicken the soup broth.

Return shredded boneless skinless chicken breasts to the pot, then serve hot topped with 1/4 cup drained capers and a drizzle of 1/2 cup heavy cream.
