Steamed Short Grain Rice

- 2 cups Japanese short-grain rice
- 2 1/2 cups water

Place 2 cups Japanese short-grain rice in a fine mesh strainer and rinse under cold water until clear.

Combine 2 cups Japanese short-grain rice and 2 1/2 cups water in a heavy saucepan and soak for 30 minutes.

Cover pot, bring to a boil over medium-high heat, then lower heat to low and cook for 12 minutes.

Remove pot from heat and let rest covered for 10 minutes.
