Tinolang Manok
A traditional Filipino chicken soup infused with ginger, garlic, and fish sauce. Tender chayote squash and leafy greens round out this comforting broth.
Ingredients
- 2 tbsp neutral cooking oil
- 1 head yellow onion, sliced
- 4 garlic cloves, minced
- 2 tbsp fresh ginger, sliced
- 2 lbs bone-in chicken thighs, chopped
- 2 tbsp fish sauce
- 4 cups water
- 1 head chayote squash, cubed
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups fresh spinach

Heat 2 tbsp neutral cooking oil in a large pot over medium heat.

Sauté 1 head sliced yellow onion, 4 minced garlic cloves, and 2 tbsp sliced fresh ginger for 3 to 4 minutes until softened and fragrant.

Add 2 lbs chopped bone-in chicken thighs and cook for 5 minutes until browned.

Stir in 2 tbsp fish sauce and cook for 2 minutes to coat the meat.

Pour in 4 cups water, bring to a boil, reduce heat to low, cover, and simmer for 20 minutes.

Add 1 head cubed chayote squash, cover, and simmer for 10 minutes until tender and internal temperature of bone-in chicken thighs reaches 165°F.

Season with 1 tsp salt and 1/2 tsp black pepper, stir in 2 cups fresh spinach, and remove from heat.
