Ube Cake
A soft purple yam sponge cake layered and frosted with rich ube whipped cream frosting.
Ingredients
- 2 cups cake flour, sifted
- 2 tsp baking powder
- 1/2 tsp salt
- 4 eggs, separated
- 1 cup ube halaya
- 1 tsp ube extract
- 1/4 cup vegetable oil
- 1/4 cup whole milk
- 2/3 cup granulated sugar
- 2 cups heavy whipping cream, chilled
- 1/4 cup powdered sugar, sifted

Preheat oven to 350F and grease two 8-inch round cake pans.

Whisk 2 cups sifted cake flour, 2 tsp baking powder, and 1/2 tsp salt in a bowl.

Beat egg yolks from 4 separated eggs with 1 cup ube halaya, 1 tsp ube extract, 1/4 cup vegetable oil, and 1/4 cup whole milk.

Whip egg whites from 4 separated eggs with 2/3 cup granulated sugar until stiff peaks form, then fold into batter along with flour mixture.

Divide batter into pans and bake for 25 minutes.

Whip 2 cups chilled heavy whipping cream with 1/4 cup sifted powdered sugar until soft peaks form, then frost cooled cake layers.
