Za'atar Manousheh
A classic Middle Eastern flatbread topped with an aromatic, earthy mixture of za'atar herbs and olive oil.
Ingredients
- 3 cups all-purpose flour
- 2 tsp active dry yeast
- 1 tsp granulated sugar
- 1 cup warm water
- 1 tsp fine sea salt
- 6 tbsp extra virgin olive oil
- 1/2 cup za'atar spice blend

Dissolve 2 tsp active dry yeast and 1 tsp granulated sugar in 1 cup warm water and let sit for 5 minutes until foamy.

Mix 3 cups all-purpose flour and 1 tsp fine sea salt in a bowl, then stir in yeast mixture and half of the 6 tbsp extra virgin olive oil until dough forms.

Knead dough for 8 minutes, cover, and let rise in a warm place for 1 hour until doubled in size.

Whisk remaining 6 tbsp extra virgin olive oil with 1/2 cup za'atar spice blend in a bowl to make a paste.

Divide dough into four balls, roll each into a flat round, and dimple the surface with fingertips.

Spread za'atar paste over dough rounds and bake at 475F for 8 to 10 minutes until edges are golden.
