Clear Spinach and Corn Soup

Ingredients
- 5 cups water
- 2 ears sweet corn, sliced
- 4 shallots, thinly sliced
- 2 garlic cloves, minced
- 1 piece fingerroot, bruised
- 1.5 tsp salt
- 1 tsp granulated sugar
- 10 oz fresh spinach, trimmed

Bring 5 cups water to a boil in a pot over medium-high heat.

Add 2 ears sliced sweet corn, 4 thinly sliced shallots, 2 minced garlic cloves, and 1 piece bruised fingerroot to the pot.

Simmer for 8 to 10 minutes until the corn is tender.
