Es Pisang Ijo
A traditional Indonesian shaved ice dessert featuring steamed ripe plantains encased in vibrant green pandan dough, served over sweet coconut cream and drizzled with red syrup.
Ingredients
- 4 ripe plantains, peeled
- 1 cup rice flour
- 2 tbsp tapioca starch
- 2 cups coconut milk
- 1 tsp pandan extract
- 1/4 cup granulated sugar
- 1/2 tsp fine salt
- 1/2 cup cocopandan syrup
- 4 cups shaved ice

Steam 4 peeled ripe plantains in a steamer basket over boiling water for 10 minutes until tender, then remove and cool.

In a saucepan, whisk 1 cup rice flour, 2 tbsp tapioca starch, half of the 2 cups coconut milk, 1 tsp pandan extract, half of the 1/4 cup granulated sugar, and half of the 1/2 tsp fine salt until smooth.

Cook the mixture over medium-low heat, stirring continuously, until a thick green dough forms and pulls away from the pan.

Divide green dough into portions, flatten each piece, and wrap tightly around each steamed ripe plantains.

Steam wrapped green bananas for 10 minutes, then remove and cool completely.

In a clean saucepan, combine remaining coconut milk, remaining granulated sugar, and remaining fine salt, then cook over low heat until slightly thickened into a smooth coconut sauce.

Slice green wrapped bananas into half-inch rounds and arrange in bowls with coconut sauce, top with 4 cups shaved ice, and drizzle with 1/2 cup cocopandan syrup.
