Dirty Rice
A Louisiana favorite loaded with ground beef, sausage, and vegetables mixed into seasoned rice. Bold flavors and comfort in one pot.
Ingredients
- 1 lb ground beef
- 12 oz smoked sausage, sliced
- 1 onion, diced
- 2 stalks celery, diced
- 1 bell pepper (green), diced
- 4 cloves garlic, minced
- 3 cups chicken broth
- 1.5 cups white rice
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1/4 tsp cayenne pepper
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup green onions, chopped

Brown 1 lb ground beef in a large pot or Dutch oven over medium-high heat, breaking it apart as it cooks, about 5 minutes. Drain excess fat.

Add 12 oz sliced smoked sausage and cook for 3 minutes.

Stir in 1 diced onion, 2 stalks diced celery, 1 diced bell pepper (green), and 4 cloves minced garlic. Cook until softened, about 5 minutes.

Add 2 tbsp tomato paste and cook for 1 minute.

Pour in 3 cups chicken broth and add 1.5 cups white rice, 1 tsp Worcestershire sauce, 1/4 tsp cayenne pepper, 1/2 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper.

Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until rice is tender and liquid is absorbed.

Fluff with a fork and stir in 1/4 cup chopped green onions. Serve hot.
