Burgoo
A traditional Kentucky slow simmered stew packed with tender meats, corn, lima beans, and tomatoes. It is thick, savory, and rich with deep flavor.
Ingredients
- 1 lb beef chuck roast, diced
- 1 lb pork shoulder, diced
- 1 lb boneless chicken thighs, diced
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 4 cups beef broth
- 1 can canned diced tomatoes, undrained
- 2 tbsp Worcestershire sauce
- 2 cups russet potatoes, cubed
- 1 cup frozen lima beans
- 1 cup frozen corn kernels
- 1 cup sliced okra

In a large Dutch oven over medium-high heat, brown 1 lb diced beef chuck roast, 1 lb diced pork shoulder, and 1 lb diced boneless chicken thighs in batches until seared on all sides, then remove and set aside.

Add 1 chopped yellow onion and 4 minced garlic cloves to the pot and cook for 5 minutes until softened.

Return the meats to the pot, add 4 cups beef broth, 1 can undrained canned diced tomatoes, and 2 tbsp Worcestershire sauce, then bring to a boil.

Reduce heat to low, cover, and simmer for 60 minutes until meat reaches an internal temperature of at least 165°F and is tender.

Stir in 2 cups cubed russet potatoes, 1 cup frozen lima beans, 1 cup frozen corn kernels, and 1 cup sliced okra, then simmer uncovered for 30 minutes until vegetables are tender.
