A classic multi-layered cake featuring thin honey biscuit rounds softened by a tangy sour cream frosting.
Ingredients
- 1/2 cup honey
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cubed
- 2 large eggs, beaten
- 1 tsp baking soda
- 3 cups all-purpose flour, sifted
- 2 cups sour cream
- 1 cup powdered sugar
- 1 cup heavy whipping cream, chilled

Combine 1/2 cup honey, 1/2 cup granulated sugar, and 1/2 cup cubed unsalted butter in a saucepan over medium heat, stirring until melted.

Whisk in 2 beaten large eggs and 1 tsp baking soda until the mixture foams up and turns a deep amber color, then remove from heat.

Gradually stir in 3 cups sifted all-purpose flour to form a soft dough, then divide into eight equal pieces.

Roll each piece paper-thin on parchment paper, cut into rounds, and bake at 350°F for 4 to 5 minutes until golden brown.

Trim the warm baked layers into uniform circles and crush the excess scraps into fine crumbs for coating.

Whip 1 cup chilled heavy whipping cream with 1 cup powdered sugar until soft peaks form, then gently fold into 2 cups sour cream.
