Mkhabez
Glazed almond pastries flavored with lemon zest and orange blossom water. These classic Algerian treats are baked until soft and coated in a smooth icing.
Ingredients
- 3 cups blanched ground almonds
- 1 cup granulated sugar
- 2 tsp lemon zest, finely grated
- 2 large eggs, beaten
- 2 cups powdered sugar, sifted
- 3 tbsp orange blossom water
- 2 tsp fresh lemon juice

In a large bowl, mix 3 cups blanched ground almonds, 1 cup granulated sugar, and 2 tsp finely grated lemon zest.

Gradually add 2 beaten large eggs and knead gently until a firm dough forms.

Roll out the dough on parchment paper to a thickness of 1.5 cm and cut into triangles.

Bake at 320°F for 12 to 15 minutes until set but not browned, then cool completely.

In a separate bowl, whisk 2 cups sifted powdered sugar, 3 tbsp orange blossom water, and 2 tsp fresh lemon juice into a smooth glaze.

Dip each cooled pastry into the glaze, allow excess to drip off, and let dry completely on a wire rack.
