Arroz de Carreteiro
A classic gaucho dish featuring seasoned dried beef cooked with rice, tomatoes, and aromatic herbs in a single pot.
Ingredients
- 1 lb carne seca or dried beef, shredded
- 2 cups long grain white rice, rinsed
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 medium roma tomatoes, diced
- 1 medium red bell pepper, diced
- 2 tbsp olive oil
- 4 cups beef broth
- 1/4 cup fresh parsley, chopped
- 1/4 cup scallions, sliced

Heat 2 tbsp olive oil in a large pot or Dutch oven over medium heat.

Add 1 lb shredded carne seca or dried beef and saute until browned, ensuring meat reaches an internal temperature of 165F.

Stir in 1 medium diced yellow onion, 4 cloves minced garlic, and 1 medium diced red bell pepper, cooking until softened.

Add 2 medium diced roma tomatoes and cook for 3 minutes until soft.

Mix in 2 cups rinsed long grain white rice and cook for 2 minutes to toast slightly.

Pour in 4 cups beef broth, bring to a boil, then cover and simmer on low heat for 18 minutes.

Remove from heat and stir in 1/4 cup chopped fresh parsley and 1/4 cup sliced scallions before serving.
