Karidopita
A traditional Greek walnut cake infused with warm aromatic spices and soaked in sweet citrus syrup.
Ingredients
- 1.5 cups water
- 1.5 cups granulated sugar
- 1 tbsp lemon juice, fresh
- 1 cinnamon stick
- 2 cups walnuts, finely chopped
- 1 cup breadcrumbs
- 3/4 cup granulated sugar
- 5 eggs, separated
- 1/2 cup unsalted butter, melted
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 2 tsp baking powder

Combine 1.5 cups water, 1.5 cups granulated sugar, 1 tbsp fresh lemon juice, and 1 cinnamon stick in a saucepan; boil for 10 minutes, then cool completely.

Preheat oven to 350F and grease a 9x13 inch baking pan.

Whisk egg yolks from 5 separated eggs with 3/4 cup granulated sugar until pale, then stir in 1/2 cup melted unsalted butter.

Mix 2 cups finely chopped walnuts, 1 cup breadcrumbs, 1 tsp ground cinnamon, 1/4 tsp ground cloves, and 2 tsp baking powder in a bowl.

Whip egg whites from 5 separated eggs to stiff peaks, then fold yolk mixture, whites, and dry ingredients together.

Pour batter into pan and bake for 35 minutes until a toothpick inserted in the center comes out clean.

Pour cooled syrup evenly over hot cake immediately after baking.
