Karydopita
A spiced Greek walnut cake soaked in a fragrant cinnamon sugar syrup after baking. It features a tender, spongy crumb rich with walnuts, warm spices, and citrus zest.
Ingredients
- 2 cups walnuts, finely ground
- 6 eggs, separated
- 1 cup granulated sugar
- 1 cup plain breadcrumbs
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1 tbsp orange zest
- 2 cups water
- 1.5 cups granulated sugar
- 1 cinnamon stick
- 2 tsp lemon juice, squeezed

Preheat oven to 350F (175C) and grease a 9x13 inch baking dish.

Boil 2 cups water, 1.5 cups granulated sugar, 1 cinnamon stick, and 2 tsp squeezed lemon juice in a saucepan for 8 minutes, then remove from heat to cool completely.

Whip egg whites from 6 separated eggs until stiff peaks form in a clean bowl.

Beat egg yolks from 6 separated eggs with 1 cup granulated sugar and 1 tbsp orange zest until thick and pale.

Stir together 2 cups finely ground walnuts, 1 cup plain breadcrumbs, 2 tsp baking powder, 1 tsp ground cinnamon, and 1/2 tsp ground cloves in a bowl.

Fold dry mixture into yolk batter, then gently fold in whipped whites until combined.

Pour into dish and bake 35-40 minutes until golden and tester comes out clean.

Pour cooled syrup over hot cake immediately after baking, then allow it to soak completely before serving.
