Shiro
Creamy Ethiopian chickpea flour paste stew, mildly spiced with ginger and served with injera. Comfort food at its finest.
Ingredients
- 2 cups chickpea flour
- 4 cups water
- 1 medium onion, finely chopped
- 1 tbsp fresh ginger, minced
- 3 garlic cloves, minced
- 1 tsp berbere spice blend
- 2 tbsp niter kibbeh (spiced clarified butter)
- 1/2 tsp salt

Heat 2 tbsp niter kibbeh (spiced clarified butter) in a large pot over medium heat.

Add 1 medium finely chopped onion and cook for 3 minutes until fragrant.

Stir in 1 tbsp minced fresh ginger and 3 minced garlic cloves, cook 1 minute more.

In a bowl, whisk 2 cups chickpea flour with 1/2 cup water until smooth to remove lumps.

Gradually add this mixture to the pot, stirring constantly.

Add remaining water slowly while stirring to create a smooth, creamy consistency.

Add 1 tsp berbere spice blend and 1/2 tsp salt, and stir well.

Reduce heat to medium-low and simmer for 15 minutes, stirring frequently, until thick and creamy.
