Tarte Flambée
A classic Alsatian flatbread featuring a paper-thin crust topped with tangy fromage blanc, sweet onions, and smoky bacon.
Ingredients
- 2 cups all-purpose flour
- 2/3 cup warm water
- 2 tbsp olive oil
- 1/2 tsp fine salt
- 1 cup fromage blanc
- 1/8 tsp ground nutmeg
- 1 yellow onion, thinly sliced
- 6 oz slab bacon, diced

Preheat oven to 475°F and line a baking sheet with parchment paper.

Mix 2 cups all-purpose flour, 2/3 cup warm water, 2 tbsp olive oil, and 1/2 tsp fine salt in a bowl, then knead into a thin dough.

Roll the dough paper-thin directly onto the parchment paper.

Spread 1 cup fromage blanc evenly over the dough and season with 1/8 tsp ground nutmeg.

Distribute 1 thinly sliced yellow onion and 6 oz diced slab bacon across the top.

Bake for 12 to 15 minutes until crust is browned and slab bacon reaches an internal temperature of 145°F.
