Tres Golpes
A classic Dominican breakfast featuring smooth mashed green plantains topped with pickled red onions, served alongside fried salami, fried cheese, and fried eggs.
Ingredients
- 4 green plantains, chopped
- 8 cups water
- 1 tsp salt
- 3 tbsp butter, softened
- 1/2 cup cold water
- 1 red onion, thinly sliced
- 2 tbsp white vinegar
- 1/4 cup vegetable oil
- 1 lb Dominican salami, sliced
- 1 lb tropical frying cheese, sliced
- 4 large eggs

Boil 4 chopped green plantains in a large pot with 8 cups water and 1 tsp salt for 20 minutes until fork tender.

Mix 1 thinly sliced red onion with 2 tbsp white vinegar in a small bowl to pickle.

Heat 1 tablespoon of vegetable oil in a pan and cook pickled 1 thinly sliced red onion for 3 minutes until soft.

Drain plantains and mash with 3 tbsp softened butter and 1/2 cup cold water until smooth.

Heat remaining vegetable oil in a skillet and fry 1 lb sliced Dominican salami until browned and internal temperature reaches 160F.

In the same skillet fry 1 lb sliced tropical frying cheese for 2 minutes per side until golden brown.

Fry 4 large eggs in remaining oil until whites are set.

Plate mashed plantains topped with cooked red onion alongside Dominican salami, tropical frying cheese, and large eggs.
